Easy Vegan Chocolate Fudge Brownies


Hey y'all!

Looking for the perfect sweet treat to take with you to all the ugly sweater parties this holiday season? I've got you covered! These brownies have one of my fave ingredients ever -- Chia seeds! They're actually one of the healthiest foods on the planet. These tiny seeds are full of nutrients, antioxidants, and fiber! They mix right into the batter so you don't have to feel guilty eating one or two slices ;)

Let me also add that in no way am I a food blogger. Honestly, food photography is one of the hardest things for me. I'm the type to slap something on a plate and dig in. So don't mind my photos, I promise that these brownies are full of all sorts of ooey-gooey deliciousness!




Easy Vegan Chocolate Fudge Brownies
Prep time 20 min  | Cook time 55 min
Serving size: 15 slices
Ingredients
1/2 cup  coconut flour 
1/3 cup dark chocolate cocoa powder 
1 tbsp. baking powder
1/2 cup chocolate nut butter
1 1/4 cup dairy-free yogurt
2 tbsp melted coconut oil
2-3 tbsp maple syrup
1 tsp pure vanilla extract
1/8 tsp salt
1/3  cup dairy-free chocolate chips
1/4 cup chia seeds
1 cup almond milk

Frosting
1/2 cup dairy-free chocolate chips
1/4 cup almond milk



1. Mix chia seeds with 1 cup of almond milk and let sit for 20 minutes until it becomes gelatinous. 

2. Preheat the oven to 350 degrees F. Using a 13x9 in brownie tray, line using parchment paper.

3. In the meantime, mix together coconut flour, cocoa powder, baking powder, a pinch of salt, nut butter, yogurt, vanilla extract, melted coconut oil, and maple syrup.

4. Once the chia seeds have sat for 20 minutes, mix into the rest of the ingredients, as well as 1/3 cup chocolate chips.

5. Pour into brownie tray and bake for 55-60 minutes or until a toothpick comes out clean.

6. Melt 1/2 cup of chocolate chips along with 1/4 cup almond milk and spread over top of the cooled brownies.

7. Store in an airtight container in the refrigerator for up to 5 days.

  1. I haven't thought of using yogurt while baking. As someone who is vegan, I find it difficult to bake vegan. It's often easier for me to run to Whole Foods to grab a vegan dessert. This recipe looks so easy that I might have to give it a go.
