Simple Avocado Toast Recipe

Hey y'all!

I think we can all agree that avocados are pretty trendy. Think I'm wrong? Then let me know why they have their very own emoji 🥑 (still waiting on the flamingo, Apple..) Along with the avocado cult is the one and only avocado toast. Not only is it extremely delicious, but it's also aesthetically pleasing, as I'm sure you've seen all over your Instagram feed.

The first time I ever made avocado toast, I literally just put a mashed up avocado on toast. Don't get me wrong, I love avocado and I love toast, but it was just so bland. Needless to say, it wasn't super yummy, and I didn't really understand the hype.

But after experimenting and listening to other people's opinions of what the perfect avocado toast recipe is, I have finally perfected my own vegan avo-toast!

So like I said, it's a pretty simple recipe, and most of the ingredients you probably already have in your pantry!

Ingredients :
  • bread (I use Arnold Premium Italian)
  • 1 avocado
  • 1/4 tsp of olive oil
  • sprinkle of red pepper flakes
  • salt + pepper to taste
  • sprinkle of chia seeds

Directions :
1. Start by putting two slices of bread into toaster
2. While bread is toasting, cut the ripe avocado in half. Save the half with the pit for later by wrapping in tinfoil and placing back in the fridge.
3. Scoop out the half of the avocado into a bowl.
4. Drizzle the olive oil in the bowl.
5. Sprinkle red pepper flakes, salt, and pepper.
6. Use a fork to mix the toppings into the avocado.
7. Once mixed well, use a fork to spread your mixture onto toast.
8. Sprinkle with some chia seeds, more pepper and whatever else you like!

(If you're not a vegan, I used to love adding scrambled egg and cheese on top)

It's that easy! That's why this is one of my favorite go-to meals when I'm short on time (or am just feeling lazy). The best part is that it's completely vegan, so it's on the healthier side of a snack. I'm all about that!
